Sweet Potato Protein Muffins
These muffins are a great source of dietary fiber which has been proven time and time again to be an important part of a heart-healthy, cholesterol-lowering diet.

Ingredients
1/2 cup
coconut flour
1/4 cup
vanilla, fremented protiens+, by Genuine Health
2 tsp
baking powder
2 tsp
ground cinnamon
1/4 tsp
fine sea salt
2/3 cup
puree sweet potato
1/3 cup
maple syrup
1/2 cup
melted coconut oil
4
wisked eggs
1/2 cup
non-dairy milk, (or water)
1/2 cup
mini chocolate chips
Instructions
- Combine all the dry ingredients in a large mixing bowl. In a separate bowl, whisk together the wet ingredients.
- Then add the wet to the dry ingredients.
- Place batter into muffin tin cups.
- Bake at 350 degrees F for 30-35 minutes or until a fork inserted into the middle of the muffin comes out clean.
- Makes 15 muffins. Or 12 if you make them larger.
