Strawberry, cucumber, and herb bruschetta
Perfect for an after-school snack, these bruschetta bites are so refreshing and can be made in under 10 minutes!

Ingredients
1 cup
strawberries, cut into 1cm cubes
1/2 cup
mini cucumbers, cut into 1cm cubes
1/2 cup
cherry tomatoes, cut into 1cm cubes
1
shallot, cut into 1 cm cubes
2 tbsp
basil, (Greek if possible)
1 tbsp
chopped chives
2 tbsp
chopped Italian parsley
3 tbsp
olive oil
1 tbsp
white balsamic vinegar
zest and juice of 1
lemon
salt and pepper, to taste
1
baguette, cut into thin slices
shaved parmesan, or other hard cheese
Instructions
- Preheat oven to 400°F.
- Oil and season the baguette slices.
- Place on a cookie sheet and toast in the oven for 5 to 7 minutes.
- Put the fruits, vegetables and herbs in a bowl. Add the oil, balsamic vinegar, and lemon zest and juice. Add seasonings and mix well.
- Place one spoonful of mixture onto each toasted baguette slice and sprinkle with cheese shavings.
- Repeat and enjoy.
