INGREDIENTS
- 1 cup strawberries cut into 1cm cubes
- 1/2 cup mini cucumbers cut into 1cm cubes
- 1/2 cup cherry tomatoes cut into 1cm cubes
- 1 shallot cut into 1 cm cubes
- 2 tbsp basil (Greek if possible)
- 1 tbsp chopped chives
- 2 tbsp chopped Italian parsley
- 3 tbsp olive oil
- 1 tbsp white balsamic vinegar
- zest and juice of 1 lemon
- salt and pepper to taste
- 1 baguette cut into thin slices
- shaved parmesan or other hard cheese
METHOD
- Preheat oven to 400°F.
- Oil and season the baguette slices.
- Place on a cookie sheet and toast in the oven for 5 to 7 minutes.
- Put the fruits, vegetables and herbs in a bowl. Add the oil, balsamic vinegar, and lemon zest and juice. Add seasonings and mix well.
- Place one spoonful of mixture onto each toasted baguette slice and sprinkle with cheese shavings.
- Repeat and enjoy.
