INGREDIENTS
- 2 cups fresh raspberries
- zest of 1 lime
- 2 tbsp fresh lime juice
- 1/4 cup finely chopped cilantro
- 1 large shallot diced
- 2 tsp red pepper flakes
METHOD
- Wash the raspberries, drain well and lay out on paper towels or a tea towel to dry.
- To make the salsa, toss together the zest, lime juice, cilantro, shallot, and red pepper flakes in a large bowl.
- Gently toss in the raspberries. Serve.
