Peanut butter chocolate energy balls

Ingredients

1 cup
pitted dates
4
pitted prunes
½ cup of
natural peanut butter
3 tbsp
cocoa powder
¼ cup
walnuts
1 tbsp
pure vanilla extract
1 dash
salt
1 tbsp
water

Instructions

  1. Place the dates, prunes, peanut butter, cocoa powder, walnuts, vanilla extract and salt into a food processor and pulse until all ingredients are blended well together to form a thick dough.
  2. If the dough does not form, add an addition tablespoon of water.
  3. Roll the dough into small balls and dip entire ball in topping of choice -i.e. shredded coconut, cocoa nibs, crushed walnuts or cocoa powder.
  4. Let the balls set for about 3 hours in the refrigerator (or over night).
  5. The balls can last in the fridge for 7 days or be frozen.
