Ingredients
3 lbs approx. 28
medium ripe apricots, rinsed, pat dry and halved
3/4 cup
liquid honey
Instructions
- Preheat oven to 250F. Line a large rimmed baking sheet with parchment paper.
- Line the prepared pan with the apricot halves, peel side down. Drizzle with honey. Roast in the oven for 2 hours. Remove and let sit for 5 minutes.
- Transfer into a food processor and blend until smooth or if you prefer slightly chunky. They are very soft, so this all happens really quickly.
- Freeze in ½ cup portions. Use as a topping for yogurt, camembert, or as an ingredient in a chicken or pork dish.
