Goji berry energy bars

Ingredients

1 cup
regular rolled oats
1/2 cup
maple syrup
1/4 cup
almond butter
2 tbsp
coconut oil
1 tbsp
vanilla
1/2 tsp
salt
2 cups
crisp rice cereal
1/4 cup
goji berries
1/4 cup
pepitas (pumpkin seeds)
1/4 cup
pistachios
1/4 cup
ground flax seeds
2 tbsp
chia seeds
1/4 cup
semi-sweet mini chocolate chips

Instructions

  1. Preheat oven to 350°F. Line a baking pan with foil. Coat foil with cooking spray and set aside.
  2. In a small saucepan combine the maple syrup, almond butter and coconut oil. Heat and stir over medium heat just until almond butter is melted. Remove from heat. Stir in vanilla and salt.
  3. In a large bowl combine oats, rice cereal, goji berries, pepitas, pistachios and chia seeds. Stir to combine. Pour maple syrup mixture over oat mixture. Stir to combine.
  4. Press oat mixture into the prepared baking dish. Sprinkle chocolate pieces evenly over the top. Press chocolate pieces firmly into oat mixture. Bake for 12 to 15 minutes or until firm. Cool on a wire rack.
