Gluten Free Blueberry Banana Muffins

Blueberry muffins with berries and cooling rack.

Ingredients

2 cups
almond flour
2
organic eggs
1/4 cup
maple syrup
1/2 tsp
baking soda
1 1/2 tbsp
apple cider vinegar
1/2 tsp
sea salt
1 tbsp
natural vanilla extract
2 tbsp
olive oil
1 cup
blueberries
1
ripe banana
1/2 cup
walnut pieces

Instructions

1. Preheat oven to 350 F 2. Prepare muffin tin with muffin liners or grease. 3. Add all ingredients except the blueberries into a large bowl. Mix together until texture thickens and ingredients are combined. 4. Fold in blueberries. 5. Spoon batter evenly between muffin pan filling them almost full. 6. Bake for 20-25 minutes, allow to cool and enjoy!
