INGREDIENTS
- 1 ripe pineapple
- 1 cup dark brown sugar
METHOD
- Cut top and bottom off pineapple. Stand on flat end; with sharp knife, cut off skin. Slice pineapple lengthwise into 4 quarters. Remove woody core; slice each quarter into large chunks, about 5-6 per piece.
- Skewer one pineapple chunk onto stick or skewer. Dip into sugar to coat. Over campfire or grill heated to high, cook pineapple, turning, until sugar is caramelized.

Marshmallow roasting sticks or pre-soaked bamboo skewers
