INGREDIENTS
- 5 cups cubed watermelon
- 6oz crumbled cotija cheese
- ½ cup granadilla pulp
- 1 lime juiced and zested
- ½ cup roughly chopped mint leaves
- 2 tsp extra virgin olive oil
- 1 tsp kosher salt
- 1/3 tsp freshly cracked black pepper
METHOD
- Combine all ingredients, reserving some of each for garnish, gently in a mixing bowl and portion out into mason jars
- Serve cold
