INGREDIENTS
- 2 tablespoons red wine vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon sugar
- 3 tablespoons extra virgin olive oil
- 2 cups Big Batch whole grains
- 1 cup chopped cucumber
- 1 cup cherry tomatoes halved
- 1/2 cup chopped celery
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped pitted kalamata olives
METHOD
- Whisk vinegar with salt and sugar in a large bowl. Whisk in olive oil.
- Stir in whole grains, cucumber, cherry tomatoes, celery, parsley and olives.
