Tofu edamame salad

This filling salad will be your new favourite way to enjoy tofu!

Dr. Joey Shulman shared her recipe for Tofu Edamame Salad with grilled tofu and a ginger sesame dressing. If you want to give your tofu an extra level of crispiness, cook it in the air-fryer instead of putting it on the grill!

Ingredients

350 g (1 package)
extra firm tofu
2 cups
edamame
2
grated carrots
1/2 cup
sliced water chestnuts
sesame seeds

Dressing

2 tbsp
sesame oil
2 tbsp
soy sauce
1 tbsp
rice wine vinegar
2 tbsp
maple syrup
2-3 cloves
grated garlic
1 tsp
grated ginger

Instructions

  1. Drain all the liquid from the tofu by squeezing it between paper towels. Cut tofu into bite size pieces. 
  2. Heat a non stick pain to medium, add oil and brown tofu pieces on both sides. Set aside. 
  3. Cook edamame in boiling water (do not overcook -cook until tender). 
  4. Take all ingredients and add to a large bowl. Add dressing and mix well. 
  5. Sprinkle with sesame seeds and enjoy!
