Sweet and savory bacon jam

Ingredients

sweet onions, thinly sliced

pound bacon strips, cooked to desired doneness and chopped

tbsp minced garlic

tbsp butter

sprigs thyme leaves

tbsp red wine vinegar

tbsp brown sugar
30
ml espresso
2
tsp kosher salt
1
tsp cracked black pepper

Instructions

  1. In a large heavy bottomed pan on medium heat add butter, once it melts add onions, salt and pepper.
  2. Reduce heat to low-medium and cook for 20-30 minutes stirring occasionally.
  3. When onions have turned golden brown then add the garlic and sauté for 3-4 minutes.
  4. Add all remaining ingredients and continue to cook for 5 minutes then remove from heat and allow to cool.
