INGREDIENTS
- 4 sweet onions thinly sliced
- 1 pound bacon strips cooked to desired doneness and chopped
- 2 tbsp minced garlic
- 2 tbsp butter
- 3 sprigs thyme leaves
- 1 tbsp red wine vinegar
- 2 tbsp brown sugar
- 30 ml espresso
- 2 tsp kosher salt
- 1 tsp cracked black pepper
METHOD
- In a large heavy bottomed pan on medium heat add butter, once it melts add onions, salt and pepper.
- Reduce heat to low-medium and cook for 20-30 minutes stirring occasionally.
- When onions have turned golden brown then add the garlic and sauté for 3-4 minutes.
- Add all remaining ingredients and continue to cook for 5 minutes then remove from heat and allow to cool.
