- 3 sprigs fresh thyme
- 1/2 tsp kosher salt
- 1 1/2 tbsp nutritional yeast
- 1 garlic clove
- 1 1/2 cup broccoli
- 1/2 cup red onions chopped
- 1 1/2 cups sweet potatoes

METHOD
- For the roasted sweet potatoes, bake for 30 mins, turn over at the 15 min mark.
- Drizzle the broccoli with a little olive oil and sprinkle a little salt and roast for 20 minutes.
- Put the cooked quinoa in a bowl and incorporate, the roasted sweet potatoes, curried sautéed chickpeas, roasted broccoli, and raw chopped red onions.
