Sweet potato and quinoa salad

A salad with no lettuce - who would've thought?

METHOD

  1. For the roasted sweet potatoes, bake for 30 mins, turn over at the 15 min mark.
  2. Drizzle the broccoli with a little olive oil and sprinkle a little salt and roast for 20 minutes.
  3. Put the cooked quinoa in a bowl and incorporate, the roasted sweet potatoes, curried sautéed chickpeas, roasted broccoli, and raw chopped red onions.
