INGREDIENTS
- 1 L perfectly diced potatoes
- 1 cup veggie stock
- 1 splash white wine
Dressing
- 1/4 cup extra virgin olive oil
- 2 tbsp grainy mustard
- 2 tbsp chopped capers
- 1/4 cup sliced artichoke
- 2 tbsp chopped chives
- 1/2 cup flaked smoked salmon
- 2 tbsp white wine vinegar
METHOD
- In a small pot cover diced potatoes with stock and white wine. Bring to a boil and remove when soft
- To make dressing … Mix all ingredients together and lightly toss with perfectly cooked potatoes, season and serve
