INGREDIENTS
- 1 red cabbage shredded
- 4 whole carrots peeled and shredded
- 1 bunch kale roughly chopped
- 1 whole white onion peeled and shaved thin
- 4 tablespoons sugar
- 1 tablespoon smoked salt
- 3 tablespoons salt
Lemon Ginger Dressing
- 1/4 cup lemon juice
- 1/4 cup apple cider vinegar
- 1 1/2 cups extra virgin olive oil
- 1 tablespoon fresh ginger peeled and grated
- 1 teaspoon dijon mustard
- pinch cumin
- salt and pepper to taste
METHOD
- Mix the red cabbage, carrots, kale, onion, sugar, smoked salt and regular salt in a bowl.
- Cover with plastic wrap and leave to sit for a few hours.
- In a separate mixing bowl add the Dijon mustard, lemon juice, cider vinegar, grated ginger. Whisk together and then slowly add the extra virgin olive oil.
- Season with salt pepper and set aside.
- After a few hours remove the plastic from the cabbage, carrot mix.
- Strain of any liquid and then add in the lemon ginger dressing. Mix well.
