How to make an iconic holiday mashed-potato bar

Chef Randy Feltis has another holiday party recipe that is already the talk of the town — an easy and simple mashed potato recipe… but level it up.

Ingredients

2.5
pounds medium size Yukon gold potatoes, peeled
2
cloves garlic
1
tablespoon kosher salt
1/2
pound butter
1/2
cup warm milk
1
white pepper, to taste

Sweet Potato Mash

2.5
pounds sweet potato, peeled

Instructions

Serves: 12-20 Prep time: 20 minutes Cook time: 50 minutes Special Tools: Potato River or Fine Sieve  

Sweet Potato Mash

  1. Roast in 375 F oven until tender.
  2. Remove let rest, the flesh should fall right out of the skin. 
  3. Whisk in large bowl until smooth.
 

Yukon Gold Mash

  1. Boil potatoes, garlic and 1/2 salt until tender.
  2. Strain and place back on the stove to dry on low heat.
  3. Add milk, butter, salt and pepper to taste.
  4. Place mash potatoes into a piping bag and pipe out small portions into stemless martini glasses.
  5. Garnishes with your preferred ingredients ex. crispy bacon, sour cream, cheddar cheese, scallions and chives, pulled pork and gravy.
