METHOD

Creamy Avocado Dressing  

  1. Add avocado, lemon juice, vinegar, shallot, Dijon mustard, olive oil, salt and pepper, and cayenne to blender or food processor. Blend until smooth, adding more olive oil or a little water, if needed.
  2. Taste and adjust for seasoning. Use as a salad dressing, dip for veggies or serve as a sauce for grilled chicken or fish.

Assembly

  1. Assemble Romaine wedges, tomato and bacon on a large plate or platter.
  2. Drizzle Creamy Avocado Dressing, to taste.
  3. Garnish with capers and chives.
