INGREDIENTS
- 1 basket halved Cherries
- 3 L White wine vinegar
- 3 L Water
- 1 L Sugar
- 1/2 cup Salt
- 2 tbsp White peppercorn
- 2 sticks Cinnamon
- 1.5 tbsp Mustard seed
- 1 tbsp Coriander seed
- 1 tbsp Allspice
METHOD
1. Bring all ingredients to a boil except for the cherries.
2. Taste and adjust seasoning if necessary.
3. Pour over cherries while hot and allow to cool to room temp.
4. Pack in a clean container and refrigerate until needed, at least 1 week before use.
