INGREDIENTS
- 2 Bosc pears quartered, cored and thinly sliced
- 3 celery ribs sliced down the middle
- 1/2 cup walnut halves toasted
- 3 oz gorgonzola cheese roughly chopped
- 1 tbsp apple cider vinegar
- 1 tsp dijon
- 1 tsp maple syrup
- 1/3 cup olive oil
- 1 tsp thyme leaves
- TT salt
- TT pepper
METHOD
- Combine prepared pears, celery, walnuts and gorgonzola in a bowl.
- Whisk together vinegar, Dijon and maple syrup then slowly drizzle in olive oil and whisk to combine. Stir in thyme and salt and pepper. Toss with salad and enjoy.
