INGREDIENTS
- 1 lb baby Yukon potatoes
- 1 water to top (barley)
- 4 garlic cloves halved
- 1 shallot sliced
- 1/2 stick butter
- 4 tbsp extra virgin olive oil
- 1 sprig rosemary
- 1 larger pinch salt
- 2 tbsp capers
- Lots of chive rings
- 1/2 lemon juice
- TT pepper
METHOD
- In a large sauté pan barley cover potatoes in water. Add all flavour boosters and simmer until potatoes start to caramelize. Smash with a ramekin and caramelize deeply.
- Remove and garnish with chives, lemon and pepper.
- We ate ours with a big dollop of sour cream. You should try them with two!
