INGREDIENTS
- 1 5 oz dough pulled
- 6 slices mortadella
- 2 oz extra virgin olive oil
- 2 oz salsa verde
- 1 oz toasted pistachio
- 2 oz grated parmigiana
Salsa Verde
- 1 tablespoon chopped gherkins
- 1 tablespoon chopped capers
- 1 tablespoon pesto
- 1/2 tablespoon grain mustard
- 1 splash lemon juice
METHOD
Special tools: cast iron pan
- In a medium heat cast iron pan, heat up olive oil. Place dough in pan crisp until golden. Flip and crisp another side
- Remove and top with grated parmesan. Then fold mortadella on top.
- Garnish with salsa verde and toasted pistachios.
