INGREDIENTS
- 2 tablespoons canola oil
- 1 cup chopped broccoli
- 3 chopped green onions
- 1 cup edamame
- 3 garlic cloves minced
- 2 tablespoons chopped fresh ginger
- 2 cups Big Batch whole grains
- 1 teaspoon toasted sesame oil
- 2 eggs lightly beaten
- 1-2 tablespoons soy sauce
METHOD
- Heat canola oil in a large non-stick frying pan over medium high. Add broccoli and green onions. Cook 2 minutes.
- Add edamame, garlic and ginger. Cook 2 minutes.
- Add whole grains and cook, stirring often until very hot.
- Make some space in the middle of the pan. Add sesame oil, then add eggs. Cook 1 minute then stir the eggs into the grains and vegetables until well mixed. Stir in soy sauce.
