INGREDIENTS
- 4 cups canned corn
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 juiced lime
- 1/2 cup crumbled feta cheese
- to taste salt
- to taste pepper
- to taste chopped cilantro
METHOD
- Add corn to a large bowl.
- In a small bowl, mix together mayonnaise, sour cream and lime juice until incorporated together.
- Add mayonnaise mixture to the bowl with the corn and mix everything together until the corn is evenly coated.
- Add feta cheese, salt and pepper and chopped cilantro (if using) and stir the corn one more time to incorporate the cheese.
