INGREDIENTS
- 1 mango peeled and julienned
- 1 orange pepper de-seeded and julienned
- 1 shallot finely sliced
- 1 jalapeno deseeded and finely sliced lengthwise
- 1 cup bean sprouts
- 1 red chili finely minced
- 2 stalks cilantro roughly chopped
- 1 tbsp toasted peanuts
Tamarind Vinaigrette
- 1 tbsp tamarind paste
- 1 tsp brown sugar
- 3 tbsp rice wine vinegar
- 1 tbsp lemon juice
- 1 cup oil
METHOD
- Combine all ingredients for vinaigrette in a squeeze bottle and shake vigorously. Set aside until required.
- For Mango Salad combine all ingredients , except peanuts and some cilantro, in a large mixing bowl and toss with desired amount of vinaigrette, top with remaining ingredients.
