INGREDIENTS
- 1 peach sliced ¾” thick
- ½ pineapple ¾” vertical slices
- ½ cup red seedless grapes
- 1/3 cup blackberries
- ¼ cup blueberries
- 3 sprigs mint
- Kosher salt
- Fresh cracked black pepper
- ¼ cup olive oil
Dressing
- 3 tbsp lime juice
- 1 tbsp honey
- 1 tsp Dijon
- 1 small clove garlic minced
- Kosher salt
- black pepper
- ¼ cup olive oil
METHOD
Pre-heat BBQ to high heat. Combine all ingredients for dressing in a squeeze bottle and shake vigorously. On a baking tray lined with a rag or paper towel, lay peach and pineapple. Cover with a rag or paper towel pressing down gently, removing this excess moisture will promote grill marks. Oil grill and place peach and pineapple on grill. Grill for approximately one minute a side. Once colour is achieved on both sides remove to a resting dish.
