INGREDIENTS
- 8 squid cleaned and and sliced 85% through, leave the back so they stay attached
- 1 cup sliced green olives
- 1 cup sliced black olives
- 1 cup cherry tomatoes
- 1/2 cup quality olive oil
- 1 handful fresh basil torn
- 1 lemon juiced
- 1 handful fresh herbs (dill, mint, parsley, chives) roughly chopped
- Salt and pepper
METHOD
Season calamari with olive oil and salt and pepper. Place on hot grill, turn after 90 seconds and repeat. In a small pan gently heat olives, tomatoes, basil and olive oil. Place chopped herbs on a large platter and top with grilled calamari. Finish with warm olives and a splash of lemon.
