Grilled caesar salad

Ingredients

1 head
rinsed romaine lettuce, halved lengthwise
1 head
rinsed radicchio, quartered
1 tbsp
olive oil
1 cup
cherry tomatoes, quartered
1 cup
croutons
200g
Parmesan cheese
2 tsp
water

Dressing

2
egg yolks
1
clove garlic, minced
¼ cup
extra virgin olive oil
1 tbsp
anchovy paste
2 tsp
whole grain Dijon mustard
2 tbsp
lemon juice
1 tsp
capers
1 tsp
Worcestershire sauce
1 tsp
Tabasco
1 tsp
lemon zest
2 tsp
water

Instructions

In a mixing bowl combine all ingredients for dressing except oil and combine well with a whisk. Then, slowly drizzle in oil while whisking to emulsify, adjust seasoning if necessary. For plating, slice lettuce into desired size or leave whole. Brush lettuce with dressing and lay down on a serving dish. Add tomatoes, croutons, more dressing and finally top with parmesan and enjoy!
