Green beans with roasted tomatoes and smoked almonds

A holiday dinner spread isn't complete until there's green beans!

Ingredients

1 lb
green beans
1
white onion
1/4 cup
smoked or roasted almonds
1 tbsp
lemon juice
1/4 tsp
salt
1/4 tsp
pepper
1/4 cup
roasted, red tomatoes

Instructions

  1. Caramelize onion in a saute pan on medium heat stirring occasionally until softened, approximately 20 minutes.
  2. Blanch green beans in boiling water for 2 minutes, drain and shock in an ice bath.
  3. Lay beans on a platter. Drizzle with lemon juice. Top with tomatoes and smoked almonds.
