INGREDIENTS
- 3 medium ripe tomatoes finely diced
- 1 small yellow onion finely chopped
- 1/4 cup fresh lime juice
- 1 fresh red chili minced
- 1/2 tsp salt
- 1 cup corn kernels thawed if frozen
- 1/2 cup fresh cilantro chopped
METHOD
- Combine tomatoes, onion, lime juice, chili (if using) and salt in a medium bowl. Let stand 5 minutes
- Stir in the corn and cilantro
- Make ahead: This keeps well in the fridge for up to 12 hours
