Fresh corn and herb salad

A light and fresh salad with a zip of lime, sweet corn and protein-packed shrimp.

Ingredients

2/3
small onion, diced
1 1/3
green pepper, diced
2/3
red pepper, diced
2/3
lime, juice only
2 tbsp
olive oil
3 tbsp
chopped basil
3 tbsp
chopped tarragon
2/3 cup
cherry tomatoes
ears of sweet corn
2 tsp
rice vinegar
2/3 cup
Metane shrimps

Instructions

  • Place onion and green pepper in a salad bowl.
  • Mix lime juice, olive oil and half of the basil and tarragon together.
  • Season to taste.
  • Pour dressing over the onion and pepper.
  • Cut tomatoes into wedges.
  • Slice the kernels from the ears of corn.
  • Add corn and tomatoes to the green pepper.
  • Add dressing and remaining herbs.
  • Add shrimp and toss.
