INGREDIENTS
- 2/3 small onion diced
- 1 1/3 green pepper diced
- 2/3 red pepper diced
- 2/3 lime juice only
- 2 tbsp olive oil
- 3 tbsp chopped basil
- 3 tbsp chopped tarragon
- 2/3 cup cherry tomatoes
- ears of sweet corn
- 2 tsp rice vinegar
- 2/3 cup Metane shrimps
METHOD
- Place onion and green pepper in a salad bowl.
- Mix lime juice, olive oil and half of the basil and tarragon together.
- Season to taste.
- Pour dressing over the onion and pepper.
- Cut tomatoes into wedges.
- Slice the kernels from the ears of corn.
- Add corn and tomatoes to the green pepper.
- Add dressing and remaining herbs.
- Add shrimp and toss.
