Simple chickpea salad
This side dish can be added to any protein to make the perfect weeknight meal!

Ingredients
4 cups
canned chickpeas
2 cups
chopped peppers
Mediterranean lemon vinaigrette
½ cup
red wine vinegar
4 tbsp
Dijon mustard
1 tsp
dried oregano
1 clove
minced garlic
1 tsp
kosher salt
¼ tsp
ground black pepper
1 cup
olive oil
4 Tbsp
fresh lemon juice
Instructions
- Put chickpeas and peppers in a large bowl. Shake the prepared Mediterranean lemon vinaigrette and drizzle over the entire salad.
- Toss and serve.
