Easy chickpea salad

Ingredients

4 cups
canned chickpeas
2 cups
chopped peppers

Mediterranean lemon vinaigrette

½ cup
red wine vinegar
4 tbsp
Dijon mustard
1 tsp
dried oregano
1 clove
minced garlic
1 tsp
kosher salt
¼ tsp
ground black pepper
1 cup
olive oil
4 Tbsp
fresh lemon juice

Instructions

  1. Put chickpeas and peppers in a large bowl. Shake the prepared Mediterranean lemon vinaigrette and drizzle over the entire salad.
  2. Toss and serve.
