This refreshing cucumber tomato salad will be the perfect addition to your summer picnics!

INGREDIENTS
- 1/2 small red onion thinly sliced
- 2 quartered and sliced cucumbers
- 2 cups halved cherry tomatoes
- 1/2 cup crumbled feta goat’s cheese
- 1/2 cup chopped cilantro
- 1 cubed avocado
- 1/2 cup toasted pine nuts
Dressing
- 1 1/2 tbsp extra virgin olive oil
- 3 tbsp lime juice
- 2 tsp maple syrup
- 1 clove minced garlic
- Salt and pepper to taste
METHOD
- Chop onion, cucumbers and slice carrots.
- Chop cilantro.
- Cube avocado.
- Toast pine nuts in a pan over medium to high heat until browned.
- Combine all ingredients together and top with goat’s cheese and dressing -mix well and enjoy!
