Spicy green bean coconut salad

This cold bean salad has it all: texture, spice and sweetness!

Ingredients

1 tbsp
canola oil
1 tbsp
fresh ginger, grated
1/4 cup
soy sauce, low sodium
1
lime, squeezed
1
seeded, finely diced bird’s eye Chili, (optional)
3 cups
green beans, steamed & cut into pieces
1/2 cup
coconut, grated
2 cups
bean sprouts, fresh
1/2 cup
shallots, fried

Instructions

  1. In a large mixing bowl add canola oil, fresh ginger, soy sauce, lime juice, Chili, and mix well. Set aside. 
  2. Into the same bowl add the green beans, coconut, bean sprouts and toss and mix well so that sauce fully coats the greens. 
  3.  To serve use a large plate or bowl and place mixed bean slaw into it. Garnished with Crispy shallots.
