Cobb salad with vinaigrette

Ingredients

marinated, grilled chicken, chopped

hard boiled eggs, roughly chopped

sliced bacon, chopped into 1/2-inch pieces

ripe avocados, halved & scooped, then diced

washed lettuce

vine, ripe tomatoes, seeded & diced

small, red onion, chopped

crumbled blue cheese
Mediterranean lemon vinaigrette
½ cup
red wine vinegar
4 tbsp
Dijon mustard
1 tsp
dried oregano
1 clove
minced garlic
1 tsp
kosher salt
¼ tsp
ground black pepper
1 cup
olive oil
4 Tbsp
fresh lemon juice
Instructions
- In a large serving dish, lay out the lettuce.
- Next, arrange rows of chopped chicken, chopped hard boiled egg, crisp bacon pieces, diced avocado, diced tomato, chopped red onion and blue cheese.
- Shake the prepared Mediterranean lemon vinaigrette and drizzle over the entire salad.
