Classic tomato carpaccio salad

This Italian inspired tomato salad is a bold blend of flavours with fresh herbs and tangy red wine vinegar.

Ingredients

4
seasonal heirloom tomatoes, sliced
2
shallots, sliced
1
handful basil
1 pinch
smoked salt
1 oz
red wine vinegar
2 oz
red wine
3 oz
extra virgin olive oil
3 twists
black pepper
¼ cup
shaved pecorino

Instructions

  1. In a hot cast iron pan sear shallots in a splash of oil. 
  2. Remove and cover with red wine vinegar and red wine. 
  3. Let soak for 4 minutes 
  4. On a large platter spread tomatoes, garnish with basil, shallots and cheese. 
  5. Season with olive oil, salt, pepper and shallot juice.
