fresh brussels, sliced
5 slices
double smoked bacon, chopped
1/4 cup
sliced red onion
1/4 cup
sliced radish
1/4 cup
sliced celery with leaves
3 tbsp
sliced almonds, cook in bacon fat
Vinaigrette
1 fork
honey
1/4 cup
extra virgin olive oil
2 tbsp
red wine vinegar

large squeeze lemon
salt & pepper, (heavy)
8 slices
pecorino
Instructions
- Mix it together and let marinate for 3-5 minutes. Top with bacon and pecorino.
