INGREDIENTS
- 10 fresh brussels sliced
- 5 slices double smoked bacon chopped
- 1/4 cup sliced red onion
- 1/4 cup sliced radish
- 1/4 cup sliced celery with leaves
- 3 tbsp sliced almonds cook in bacon fat
Vinaigrette
- 1 fork honey
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 large squeeze lemon
- salt & pepper (heavy)
- 8 slices pecorino
METHOD
- Mix it together and let marinate for 3-5 minutes. Top with bacon and pecorino.
