Adzuki bean dip
Perfect chilled and served with corn chips!

Ingredients
¼ cup
low fat mayonnaise

for zest, lime
2 Tbsp
fresh lime juice
2 tsp
hot sauce
2
crushed cloves garlic
¼ - ½ tsp
(your call) chipotle chili powder
¼ tsp
table salt
2 cups
cooked adzuki beans
1
diced avocado
1 cup
chopped cilantro
1 cup
cooked corn
4
sliced thinly green onions
For serving, whole grain corn chips
Instructions
- In a medium bowl, whisk together: mayo, lime zest, lime juice, hot sauce, garlic, chili powder and salt.
- Add adzuki beans, avocado, cilantro, corn and green onion. Gently mix together. Store in the fridge for at least 1 hour and serve with corn chips.
