INGREDIENTS
- ¼ cup low fat mayonnaise
- 1 for zest, lime
- 2 Tbsp fresh lime juice
- 2 tsp hot sauce
- 2 crushed cloves garlic
- ¼ - ½ tsp (your call) chipotle chili powder
- ¼ tsp table salt
- 2 cups cooked adzuki beans
- 1 diced avocado
- 1 cup chopped cilantro
- 1 cup cooked corn
- 4 sliced thinly green onions
- For serving, whole grain corn chips
METHOD
- In a medium bowl, whisk together: mayo, lime zest, lime juice, hot sauce, garlic, chili powder and salt.
- Add adzuki beans, avocado, cilantro, corn and green onion. Gently mix together. Store in the fridge for at least 1 hour and serve with corn chips.
Makes – 4 cups
