A sweet, sour and salty potato salad that compliments any main course!

Ingredients
1.5lb
fingerling potatoes
1 L
chicken stock
1 splash
white wine
2 cloves
of sliced garlic
salt and pepper
Dressing
1.5 cups
yogurt
1/4 cup
chopped dill pickle
1/4 cup
crispy double-smoked bacon
1 tbsp
dijon
1
lemon, juiced and zested
1 tbsp
dill
2 tbsp
chopped chives
salt and pepper, to taste
Instructions
- In medium-size pot cover potatoes with stock and white wine
- Add garlic salt and pepper. Place lid on and simmer for 18 minutes or until tender
- Remove from heat and let cool in the liquid
- Remove and slice lengthwise
- To make dressing … Mix all ingredients and lightly toss with potatoes
- Season and serve
