Yogurt Double-smoked Bacon Fingerling Potato Salad with Dill Pickle

A sweet, sour and salty potato salad that compliments any main course!

Ingredients

1.5lb
fingerling potatoes
1 L
chicken stock
1 splash
white wine
2 cloves
of sliced garlic
salt and pepper

Dressing

1.5 cups
yogurt
1/4 cup
chopped dill pickle
1/4 cup
crispy double-smoked bacon
1 tbsp
dijon
1
lemon, juiced and zested
1 tbsp
dill
2 tbsp
chopped chives
salt and pepper, to taste

Instructions

  1. In medium-size pot cover potatoes with stock and white wine
  2. Add garlic salt and pepper. Place lid on and simmer for 18 minutes or until tender
  3. Remove from heat and let cool in the liquid
  4. Remove and slice lengthwise
  5. To make dressing … Mix all ingredients and lightly toss with potatoes
  6. Season and serve
