INGREDIENTS
- 2 medium spiralized zucchinis
- 1 tbsp olive oil
- 1/3 tsp fresh cracked black pepper
- 1 L tomato sauce
Meatballs
- 1 lb lean ground turkey
- 3 cloves minced garlic
- 1 small minced onion
- 5 stalks finely chopped fresh parsley
- 3/4 tsp salt
- 1/3 tsp smoked paprika
- 1/3 tsp oregano
- 1/3 tsp fresh cracked pepper
- 1 beaten egg
- 2 tsp olive oil
METHOD
- Place tomato sauce on the stove on low medium heat.
- Combine all ingredients for the meatballs, except oil, in a bowl and form into 1.5” balls.
- Pre-heat a pan to medium heat and sear until golden brown all around, 5-6 minutes.
- Place meatballs directly into tomato sauce and allow to cook for 15-20 minutes.
- In a large frying pan on medium heat add 2 tsp olive oil. Sautee zucchini for 2-3 minutes, ensuring it does not cook through.
- Transfer a portion of zucchini to a plate and top with sauce and meatballs.
