INGREDIENTS
- 1.5 cups basmati rice rinsed
- 1 yellow onion finely diced
- ½ tsp cumin
- ½ tsp turmeric
- ¼ tsp cinnamon
- 2 ¼ cups water warm
- 1 ½ tsp kosher salt
- 1/3 tsp fresh cracked black pepper
- ¼ cup pitted dates chopped
- ¼ cup apricots chopped
- ¼ cup raisins
- 2 tbsp slivered almonds
- 3 tbsp unsalted butter
Cardamom yogurt
METHOD
- Melt butter in a pot on medium-low heat. Add onions and sweat for a few minutes before adding garlic, continue to sweat.
- Add all spices including salt and pepper to the pot and stir well for approximately a minute before adding the rice.
- Add water and bring to the boil then reduce heat to low, cover and simmer for approximately 15 minutes.
- Remove from heat, remove lid and garnish with dried fruits and almonds.
- To Make Dressing : Combine all ingredients for yogurt together and serve on the side with the rice.
