Spaghetti al “Rosso Nero”

Ingredients

1 lb
Spaghetti
2 tbsp
Butter
1 tbsp
Olive Oil
2 tbsp
Chopped Shallots
4 oz
Vodka
1 cup
Tomato Sauce
2 cup
35% Cream
12 oz
Chopped Smoked salmon
Salt & Pepper to taste

Instructions

Cook the Spaghetti in plenty of salted boiling water for the amount of time set on the package. Preheat a sauté pan and in it add the oil and a nugget of butter, add the shallots and let them sweat out a bit, add the tomato sauce, 2oz of vodka and the cream, season with salt and pepper and simmer for a minute until the cream becomes denser. Strain the noodle and add them to the cream, add the shredded salmon and toss well, add the remaining vodka and give it a quick simmer and serve. Garnish with the reserved salmon!
