Naked Chicken Parmesan

This guilt-free version of traditional chicken parmesan will be your new go-to.

Ingredients

4
boneless, skinless chicken breasts
1 ½ tbsp
extra virgin olive oil
½ tsp
sea salt
½ tsp
black pepper
½ cup
pizza sauce
2 cups
shredded mozzarella cheese
½ cup
shredded Parmesan
fresh basil leaves

Instructions

  1. Preheat oven to 450F. Line two baking sheets with parchment paper.
  2. Between sheets of plastic wrap and using mallet or rolling pin, pound chicken to ½ inch thickness.
  3. Transfer to prepared baking sheets. Drizzle with olive oil and sprinkle with salt and pepper; rub to coat. Flatten evenly into circular shapes.
  4. Top each chicken piece with 2 tbsp of tomato sauce, ½ cup of mozzarella and 2 tbsp parmesan and any other desired toppings.
  5. Bake until cheese is melted and bubbling and chicken are cooked through, about 15 - 20 minutes. Let cool slightly; top with basil, if using.
