Double Smoked Potato Skins with Celeriac Apple slaw

Ingredients

(extra large) potatoes
2 lb
(cut into lardons and crisped) double smoked bacon
1 cup
BBQ sauce
2 cups
(grated) aged cheddar
Slaw
2
(julienned) honey crisp apples
1/2
(julienned) celeriac
1
(julienned) carrot
1
(seeded and julienned) cucumber
1/2
(julienned) radicchio
1 bunch
(leaves torn) mint
1 tbsp
grain mustard
1
juiced lemon
1 tbsp
mayonnaise
1 splash
olive oil
salt and pepper
Instructions
- Preheat oven to 350 degrees.
- Rub potatoes down with olive oil and stab with a fork. Season with salt and pepper, then bake for 1.5 hours.
- Let cool, cut in half and hollow out the flesh. (Make into anything awesome just don’t throw out maybe hash browns)
- Slaw: Add all ingredients together in a large bowl and season with salt and pepper. Set aside
- Brush inside of potato with olive oil and broil until crispy.
- Add bbq sauce, bacon and cheese, broil until cheese is melted and delicious.
- Top with seasoned slaw I mean lots of slaw. It should be the perfect marriage of cheese and bacon with a healthy topping. So perfect you might have two.
