Double Smoked Potato Skins with Celeriac Apple slaw

Ingredients

5
(extra large) potatoes
2 lb
(cut into lardons and crisped) double smoked bacon
1 cup
BBQ sauce
2 cups
(grated) aged cheddar

Slaw

(julienned) honey crisp apples
1/2
(julienned) celeriac
1
(julienned) carrot
1
(seeded and julienned) cucumber
1/2
(julienned) radicchio
1 bunch
(leaves torn) mint
1 tbsp
grain mustard
1
juiced lemon
1 tbsp
mayonnaise
1 splash
olive oil
salt and pepper

Instructions

  1. Preheat oven to 350 degrees.
  2. Rub potatoes down with olive oil and stab with a fork. Season with salt and pepper, then bake for 1.5 hours.
  3. Let cool, cut in half and hollow out the flesh. (Make into anything awesome just don’t throw out maybe hash browns)
  4. Slaw: Add all ingredients together in a large bowl and season with salt and pepper. Set aside
  5. Brush inside of potato with olive oil and broil until crispy.
  6. Add bbq sauce, bacon and cheese, broil until cheese is melted and delicious.
  7. Top with seasoned slaw I mean lots of slaw. It should be the perfect marriage of cheese and bacon with a healthy topping. So perfect you might have two.
