Chef Randy Feltis shows you how to make quick and simple delicious sides, including a sweet potato stack.
INGREDIENTS
- 2-3lb peeled medium sweet potatos
- 1/4 cup extra virgin olive oil
- 1 stick melted butter
- 1 pinch kosher
- 1 pinch black pepper
- 12 springs thyme
METHOD
- Slice your sweet potatoes into coins about 2 mm thick.
- Toss in a bowl with olive oil and butter.
- Season with salt pepper and thyme.
- Stack your coins into a muffin tin and bake at 375 until golden and tender. (42-48 minutes)
- Remove and let rest for 6 minutes and serve. I already have some here.
