Spinach roast garlic and feta spiral pie

Ingredients
1/2 cup
olive oil

garlic cloves
2 cups
cooked spinach, chopped
1 cup
feta, crumbled
1/2 cup
grated parmigiana
1
egg
6 sheets
phyllo
1
kosher salt and black pepper
Instructions
- In a small sauce pot cover garlic with olive oil and simmer until golden. Remove and add garlic, use the olive oil for brushing phyllo.
- Preheat oven to 400F.
- In a medium bowl mix garlic, spinach, cheese, egg and a healthy amount of black pepper.
- Cut phyllo sheets in half lengthwise and brush with olive oil. Stack 3 sheets on top of each other and place some spinach mixture on the edge. Roll up like a big stoggie, then roll into a spiral. Place in the middle of the pie pan. Continue with the spiral until the pan is full.
- Brush with oil and bake for 23 minutes of until golden.
